Description
This is a knock-off of Saison Dupont. Adapted from CloneBrews (Szamatulski pg. 364) and then adapted it to my set-up. I use a 10 gallon kettle and boil approximately 5.75 gallons of water to achieve a 5.125 batch size. If you use a stove top set-up (2.5 gallons at boil), then put your Styrian Golding hops in at 60 minutes instead of 45 minutes. All other hops are the same.

Procedure (1) Add 5 Gallons Fresh Water bring to 150 F (2) Steep Cara-Munich & Cara-Vienne for 30 minutes @ 150 F then sparge with 1 Gallon of 150 F fresh water (3) Add: DME & Candy Sugar then bring to a boil for 15 minutes (4) Add: Styrian Hops and boil for 30 minutes (5) Add: .5 oz Kent Golding and boil for 10 minutes (6)Add: .25 oz Kent Golding and boil for 5 minutes (7)Cool, Strain to Primary Fermentor, Pitch Yeast
