Actually what I ended up brewing after writing Pale Ale I. Some changes were made at the homebrew shop based on advice I received there.

Procedure Set your yeast on the counter at room temperature about 1 hour before starting to brew. It has to be at room temperature by the time you are ready to pitch it into the wort. Ideally, you want your yeast and wort to be as close to the same temperature at the time of pitching so you don't shock the yeast. Steep grains for 30 min at 155 degrees F. Remove grain bag (rinse with hot water if you want to extract more color). Add bittering hops (centennial) and bring to a boil. After boiling for 30 minutes, remove kettle from heat and carefully add your extract and brown sugar into your wort, stirring very well so that it is all dissolved. Stir some more! It has to be all dissolved! Toss in your flavor hops (centennial) and bring to a boil. With just 5 minutes left in your boil, toss in your aroma hops (cascade). Remove brew kettle from heat and cool as quickly as you can to about room temperature (between 68 deg F - 78 deg F).
