Tasting Notes This is not a real dark porter but it has a nice balance between hops and malt flavoring.

Procedure The malt extract syrup I used was Canadian. This is a little low on the gravity points. OG was 1.055 at 72 degrees and FG was 1.013 at 65 degrees. ABV = 5.5% Bring water to 168 degrees and steep all grains for 30 mins. Added 1 tsp gypsum and 2 tsp chalk to the end of the steep. Note: my water is real low in Calsium. After steeping add the extract and bring to a boil. After 10 minutes into the boil skim off the hot break and add the bittering hops. After 45 mins. add the flavoring hops and Irish Moss. Cool wort to around 70 degrees. While cooling the wort add 2 gals. of brewing water to a 6.5 gal. carboy. Once cool add the wort to the carboy and top off with brewing water to 5.13 gal. and shake for about 3-4 mins. to add oxygen before pitching the yeast. Keep at room temperature until airlock shows signs of activity (2-3 hours), and then move to a cool (about 65 degrees) dark place. Rack to a secodary after 10 days, bottle after another 7. Finished beer was a little haze at room temp. but clears up when chilled.
