Description
I have probably brewed a dozen variations of this Strong Scotch Ale. This version is my favorite so far. I did a partial kettle caramelization to enhance caramel flavor. Richly malty, low hop bitterness...true to style.

Yeast Wyeast Scottish Ale - 1728 (75% app. attenuation)
Primary Fermentation better bottle, 7 days
Secondary Fermentation better bottle, 28 days
Other Fermentation
Procedure Mash at 154 F for 75 min. Fly sparge. Partial kettle caramelization of 1.5 gallons of wort (reduced to ~0.5 gallons) in separate pot, remainder of wort boiled for 90 minutes. Added Fuggles hops at indicated times. Fermentation at 60-65 F.
