Description
I was looking to use WLP 004 Irish Ale in a pale ale. This is what I ended up with. It is the first beer I thought was good enough to list. There is a nice amber color and light crisp hop aroma.

Tasting Notes Classic cascade bitterness. Citris aroma

Boil Volume 7.25 gallons
Boil Time 60 minutes
Batch Size 5.25 gallons
Yeast WLP 004 (75% app. attenuation)
Primary Fermentation 7 days in plastic bucket
Secondary Fermentation 2 weeks in glass; dry hop with 1oz Cascade 8.9%aa
Other Fermentation
Procedure Mash grains in 13.5qts at 153*F. After 1 hour recirculate 3 qts. Drain into boil pot. Sparge grains in 18.5qts at 170*F. After 20 minutes recirculate 3 qts and drain into boil pot. Boil for 60 minutes. Add 1tsp of Irish Moss with 15 minutes left in the boil.
