An Maibock with a little bit of Imperial kick to it. Nice Amber color (SRM:12) and balanced BU:GU (36:1.095=0.38).

Procedure Mash: Use a double decoction mash. Mash in 18qt @ 130deg with grain. Rest @ 122deg for 10mins. Remove thickest 1/3 of grain and bring to a boil adding boiling water if sticking. Boil for 30mins. Return boiled mash to mash tun stirring in. Adjust temp of mash to 149deg rest for 45mins. Remove thickest 1/3 of grain again and bring to a boil. Boil for 20mins. Return boiled mash to mash tun stirring in. Adjust temp of mash to mashout 168deg, rest for 10mins. Sprage with 5gals 175deg water.

Boil: Add Hallertaucher @ 90 + 60mins. Add Tettnanger and Honey @30mins. Add Saaz, Yeast Nutr, and Irish Moss @ 15mins. Liquored down to SG=1.095.

Pitch: Aerate very well. I used O2 for 1 minute and strained wort. Pitched large yeast starter (2 qts). Had fermentation active within 12 hours.

Bottle: If bottle conditioning use 107g of corn sugar adding about a tbsp of fresh yeast (I added Zurich Yeast WLP885) that can handle the high ABV. Age in bottle for about 60 days... and enjoy!
