Recipe Details
Tasting Notes A robust, well rounded, black as night stout with the superb pairing of chocolate and raspberries. Roasted and black patent malts give the body a super dark appearance and roasted barley compliments the chocolate flavor. The raspberries stay on the pallette from start to finish.

Procedure Bring 2.5 gal of water to 154 F. Hold and steep grains for 20 minutes. Remove grains and add LME. Bring to boil. Start timer then follow hop schedule accordingly. Add maltodextrin and bakers chocolate at the final 15 minutes of the boil. Add raspberries at knockout. Strain them from wort kettle and then set aside. Pour wort into primary. Add cold water to bring volume up to 5 gal. Pitch yeast @ 76-78 F. Aerate for 3 minutes. Add raspberries back to primary. Seal with an airlock. If you desire to rack, strain off and discard the raspberries as the yeast will have stripped the color and ferementable sugars out of them. This beer is remarkable after 6 months but can be enjoyed after 4 weeks with a very prominent chocolate and raspberry flavor and an all around robust mouth feel.
