Description
This is a scotch ale recipe (the strongest of the scottish styles) I brewed with my father back in April, 2011. These ales are noted for their intense maltiness which is usually achieved by a high mash temperature (156+F) and a long, low-temperature fermentation (52-58 F). I had pretty low efficiency with this beer, which is to be expected for a first all-grain batch, but I believe it also had something to do with Midwest Supplies not crushing my 2-row pale enough. Regardless, I had higher attenuation than expected, which compensated for the lower OG and I got within 0.1% of my expected ABV.

Recipe Details
Tasting Notes Has intense malty body with lots of caramel, milk chocolate and mild coffee-like notes. Minimal hop bitterness (which is desirable for this style). Minimal head formation, but the retention was pretty good. Lots of thick lacing on the glass.

Procedure Made a 1 L starter using DME. about a week beforehand and stored in fridge after the activity died down. Mash settled at 154 F (a little lower than my target). Mash 1 hr. 5 gal. 1st runnings. 2 gal. 2nd runnings. Brought wort to a boil, turned off the heat and stirred in 1 lb. dark brown sugar. Boiled 120 min. with 1.5 oz Fuggles @ 60 min. 1.5 Fuggles @ 30 min. 1tsp Irish Moss @ 15. Ambient temp at fermentation was between 54-59 F. Took a full 6 weeks to bottle condition (Likely meaning I should have fermented for less time). Definitely worth the wait, though! Delicious.
