Recipe Details
Tasting Notes Pine and earthy from the rye, herbal and floral from the hops, sweet from the honey. Busy, lots of stuff to smell and taste, but I like it.
Awards Favorite beer of my household, that's the most important award homebrew can get.
Boil Volume 11.50 gallons

Procedure 1 quart of water (w/a tbsp of gypsum for my water) per pound of grain to a protein rest at 120-122 for 30 min, add boiling water to bring mash up to 151-154 for 60 min, use iodine to check for starch conversion or use a refractomer to test at 10 minute intervals. The SG will go up fast initially, then slow down. When the readings stop going up, you won't get any more out of your mash. Secondary fermentation can go as long as you want, and this beer will be a little green for about 4-6 weeks, but will start to reach peak flavor after 8 weeks of bottle conditioning. It will retain it's peak for up to a year, but you'll drink it before then. I tend to use locally produced wildflower honey for mine, but use what you want for yours. One note on the sparge. With a rye percentage this high, it's easy to get a stuck sparge. Go slow! I'm able to use a false bottom and I don't get a stuck sparge if I keep my sparge rate slower than 1 quart per minute. The AAU's are held over from the first time I did this beer. I don't hold to the AAU's so much as I do the weight and type of each hop addition. Some years the AAU's are higher and push the IBU's to near 90, some years they're lower and the IBU's go near 60. It's good either way.
