Recipe Details
Tasting Notes Up front spice from the yeast and rye. The yeast adds a lemon/orange aroma as does the hops and honey making it hard to tell where one influnce ends and the next begins.
Awards I have yet to enter it but will rebrew soon and enter it for the feed back

Boil Time 90 minutes
Batch Size 5.50 gallons
Yeast Wyeast 3711 french Saison (95% app. attenuation)
Primary Fermentation Glass 14 Days
Secondary Fermentation None

Procedure 60 min. rest at 152F, dough in with 4.5 Gallons, Sparge with 4.5, ~7+ Gallons to the kettle boil about 30 Min. until volume is 7 gallons. Pitch appropriate amount of yeast into 76F wort let free rise to where ever it wants to go and it should eat everthing in it's path in 3 to 4 days but let it go 2 more weeks to clean up after it self. I've done grain to glass in 3 weeks with cold crashing and keging.
