Recipe Details
Tasting Notes Loads of citrus/grapefruit flavor and aroma. The bitterness is there, but it has just enough sweetness from the crystal malts to keep things balanced. Also, don't let the high ibu's scare you. Supposedly the human tongue can not perceive bitterness over 100 ibu's, so instead of intense, overpowering bitterness, you get tons of hop flavor and aroma.
Awards It won the "best beer I've ever tasted" award, by several friends.

Batch Size 6.50 gallons
Yeast Safale US-05 (78% app. attenuation)
Primary Fermentation 6.5 gallon glass carboy for seven days.
Secondary Fermentation 5 gallon carboy for seven days with dry hops.
Other Fermentation
Procedure Single infusion mash using 4.5 gallons of 167 water, leaving a 152 mash for 60 minutes. Fly sparge with enough 170 water to collect 7.5 gallons of wort. For the boil I used nylon hop bags to reduce the amount of wort lost to hop sludge. Dry-hopped in the secondary for seven days with the hops split into two (boiled) nylon bags, weighed down with a few (also boiled) glass marbles. I use the bags, because I always end up with hop debris in the bottles if I don't. Recipe assumes 65% efficiency, so you can adjust the grain bill depending on your own system. This was also the first time I've used the US-05 yeast and I honestly can't tell a difference from the WLP001 or the Wyeast 1056.
