Primary Fermentation Glass 7 days @ 45 Degrees F.
Secondary Fermentation Glass 30 days @ 45 Degrees F.

Procedure Triple Decotion Mash with 15 min rests at 98, 125, 170, and 30 minutes at 150. Mash in at 98. Pull 40% of the volume (Decotoin) and raise to 125 for 15 minutes, 150 for 15 min and then 160 for 15 min. Bring to a boil for 30 min. Add back to the Mash. Should raise the mash to the next 15 min rest level. Repeat for the remaining mash rest temperatures. For the 150 rest, rest for 30 minutes. Mash out at 170. Ferment at 45 degrees F. After fermentation stops, lager for 200 days at 30 degrees F.
