Description
A simple extract I did. After tasting 2 years later and really liking it, I thought I'd post the recipe. I measured OG at 1.046. I did pitch this on a yeast cake from a previous batch. Also, I let it go a long time. When racking to secondary, my notes indicate it was at 1.013. I kegged most of this and just bottled two for later drinking. The bottles used Coopers carbonation drops and were not force carbed.

Tasting Notes Brewed: 12 Jun 08 Bottled: 28 Sep 08 Tasting: 17 Oct 10 Aroma: It has a spicy wheatness I associate with Belgians. Little to no malt or hop aroma. Appearance: Lots of carbonation and head. Head was white with just the faintess touch of blonde yellow to it. The head relaxed and had good retention. Extremely effervescent. Very clear and moderately gold in color. Flavor: A mild and soft sweetness in the initial taste. Perhaps a slight bit of wheat taste to it. Little hop bitterness. Finish medium-dry. Mouthfeel: Medium-light body and medium-high carbonation. Very mild astringency. Overall: I'm surprised at how it tastes. It's very easy to drink and I think could prove very popular. I wish I had tasting notes from when I drank most of the batch; I think I may not have liked it as much then. It's aged extremely well.

Procedure Bring 2 gallons of water and cracked grains to 150˚F and hold at that temperature for 30 minutes. Remove grain bag, drain over pot, and discard grains. Increase until boiling and remove from heat. Add extract and return to boil. After hot-break, add hops and boil for 60 minutes uncovered. Remove hop bag. Rapidly chill the wort to 100˚F. Add to 3 gallons of 40˚F water to boil pot. Take specific gravity reading and record above. Pour onto yeast cake and top off to 5 gallons. Violently stir the wort with a sanitized spoon to aerate and mix. Cover and set aside to ferment.
