04C. Bitter And English Pale Ale, Strong Bitter / English Pale Ale
Description
Meant to be a pale ale, this is the first beer we attempted, one of many made in an impromptu crappy-kitchen-turned-brewery in my old college dorm room, fermented first in the main living area, then in a tipped bureau at fluctuating and cold temperatures (window kept open in early March to fight the heating system set to the high 70s). Despite the odds against it, a disastrous lauter and nearly-failed sparge, it came through outrageously well, if a bit cloudy. This is the brew we wistfully think back on as 'the one that didn't die for some reason'. Will be brewing this recipe again very soon - should come out even better now that we have the right equipment and know how.

Recipe Details
Tasting Notes One month - Deep red to brown, slightly sweet, cloudy with pronounced caramel flavors and medium/low bitterness, finishing hit from the alc. Two months - great brew, alc has mellowed. Complex grain bill lent some more nuanced flavors - we may consider lowering/skipping the chocolate malt next time to lighten the color, though it lent the brew some good background notes.
