Recipe Details
Tasting Notes My favorite summer brew thus far - a truly excellent beer. Sweet front that finishes drier than you might expect, aroma is strongly reminiscent of apricots. Beer is smooth and honey colored, a little hazy, head retention is significant.

Secondary Fermentation Glass, 14-18 days - 68F

Procedure Single step infusion, held at 152F for 60min. Sparged to gravity 1.010 w/ H20 @ 175F - no problems sparging despite the 50% wheat in the bill - if you're worried about stuckage get a pound or two of rice hulls in there. Boil 70min or until roughly 5gal, cool to 65F, pitch doubled yeast starter, put away at 68F. Wrack at 7-10days to glass carboy, bottle after two weeks or so.
