Boil Volume 14.00 gallons
Boil Time 90 minutes
Batch Size 10.00 gallons
Yeast White Labs WLP400 wit w/ 600ml starter (74% app. attenuation)
Primary Fermentation glass, 7 days
Secondary Fermentation glass, 7-10 days
Other Fermentation corny keg, 1-3 months
Procedure full mash. mash grain w/ 8 gallons water @ 158 degrees F for 60 min, bring mash to 170 degrees for abt 10 min and sparge and collect 14 gallons wort. boil for 90 min (don't forget yer hop additions), collect 11 gallons, cool and pitch yeast. add crushed spices to secondary fermenter for a cleaner taste as apposed to boiling them. Please note the style comparison to the right will be off due to the use of unmalted wheat in the grain bill. You should expect an original gravity of about 1.040-1.050 based on mash efficiency.
