Procedure Step mash from 33 degrees C for 60 minutes, 38C acid rest for 20 minutes, 50C protein rest for 30 minutes, 68C for 60 minutes. Mash out at 70C and don't forget to recirculate the first litre, until the wort runs clear. Ferment to dry, use PVPP or PolyClar to remove any suspended yeast, rack for 14 days at 4-5 degrees, keg, and age for minimum of 30 days.
