Recipe Details
Tasting Notes I found this to be an excellent beer. It has a strong, well-rounded hop character with a floral aroma. A hint of flavor from the Belgian Special B rounds out the body nicely.

Yeast White Labs WLP001 - California Ale Yeast (75% app. attenuation)
Primary Fermentation Glass 7-8 days
Secondary Fermentation Glass 14 days
Other Fermentation Bottle Conditioned 3 weeks
Procedure Steep grains at 160 degrees for 10 minutes. Bring to boil, remove from heat. Stir in malt extracts. When completely dissolved, return to heat. Once boiling again, start 60 minute boil timer, and add Perle hops. After 15 minutes, add Irish Moss. After 45 minutes, add Mount Hood and Willamette hops. Top up to 5 gallons. Cool to below 80 degrees, then pitch yeast and aerate. Dry hop with centennial hops after one week, when racking to secondary.
