Description
A beautifully copper-colored, very smooth beer, with just a hint of maple syrup and brown sugar and some spice notes. Tastes like drinking a slice of pumpkin pie.

Procedure Steep 4 lbs pumpkin puree at 165F in 1 gallon water for 30 minutes, then bring to boil. Squeeze pumpkin to get out the last bit of juice and discard. Steep grains in separate 1 gallon water for 30 minutes at 150F, then add pumpkin water, bring to boil and remove grains. Begin regular boil procedure (add extract, hops, etc). Add 1 tsp pectic enzyme to the primary just after you've cooled the wort and added it to your fermentor. Then let it set for 1-8 hours before pitching your yeast to help with clarity in the final product (removes the chill haze from pectins in the pumpkin). Boil spices and extra sugars for 5 minutes in 3 cups water and filter into secondary.
