Recipe Details
Tasting Notes Early on it gave a spicy alcoholic warmth along with a subtle pumpkin taste & the Belgium yeast gave it a unique/mellow fruity note.

Procedure I used about 9 lbs home grown pumpkins. Clean/cut/bake @ 355 for about two hours..until soft and roasted. Mash grains and pumpkin @ 122 for 45 min (protein rest) Afterward add hot H20 and get to 147-150 degrees. Hold for 90 mins. Check for starch conversion. Lauter until you reach aprox 7 gallons. Bring to boil & add Wilmette & 2 lbs of DME (lite) boil for 90 mins. @ 45 mins add 1 lb dark brown sugar @ 20 min Irish Moss @ 10 mins 3 Tbsp Cinnamon, 1/2 Tbsp nutmeg, 1/2 Tbsp Allspice, 1 Tsp Yeast nutrient, 1 oz Fuggels. Cool, Strain, pitch yeast (from a 650 ml or larger starter). My OG was 1.080 but my system is makeshift...yours might be better. 2 weeks on rack onto two chopped and scraped vanilla beans. After a week bottle.
