Description
My first attempt to clone Stone's 13th Anniversary Ale. Not quite sure how to classify it - as American Pale Ale or IPA - but am trying for the deep red, higher alcohol, hop monster that it is.

Procedure Steep Chocolate and Crystal at 150 F for 30 min. Sparge with 1 qt hot water. Add Light and Amber drymalts and bring to boil. Hop Schedule - 1 oz Chinook 60 min, 1 oz Chinook 45 min, 1 oz Chinook 40 min, 1 oz Centennial and 1 oz Simcoe for DH in secondary. Irish moss to clarify. Pitch with starter yeast of WLP001 brewed 2 days earlier.
