Description
Weizenbock, unlike other bock beer, is an ale. Literally "Wheat Bock", it is a big wheat beer enriched with some darker barley malts. One of my most popular recipes so far.

Procedure A mini-mash of 4+ #s of malt @ 156* F. for 45 minutes. Add water to boil pot to have enough to reduce to 5 gallons with a 60 min.boil (5 1/2 to 6 gallons depending on your system.) Add 1.5 # light dry malt extract and bring to a boil. Add hops when boil begins. 30 min. into boil start slowly adding the 7.5 # Wheat DME stirring and adding as it dissolves. Ferments out quickly (my batch was kegged at 10 days but FG was achieved in 5 or 6)
