Instant alcoholism: A Stone Levitation Clone All-grain
ABV4.40 %
BJCP Style
06B. American Pale Ales, American Amber Ale
After trying Stone Brewery's Levitation, I knew I had to find a way to brew a match (Mostly because mine was gone and I couldn't afford more Stone). Well, I haven't had them side-by-side, but mine matches theirs on the numbers (alcohol, IBU, color) and hops used. It is also most definitely the best beer I have ever brewed. "Instant alcoholism" suggests that it might be a little too good. Take this as a word of caution to all who brew this recipe: I have consumed far more beer since I've had this one on tap. You might expect the same results. Good luck, and I'd love to hear comments from anyone who attempts this brew. ***Apparently, the calculator changed regarding utilization as when I first made this, it calculated my IBU @ 46. Not that it matters, but that's why the numbers are a little higher than Stone's levitation.

Tasting Notes This beer is the perfect blend of malty and hoppy. In fact, prior to trying the beer this was modeled after, I didn't think I liked malty beers. With the right amount of hopping, this beer makes malty a new experience.
Boil Volume 5.00 gallons
Boil Time 60 minutes
Batch Size 5.00 gallons
Yeast WLP051 California V Ale Yeast by White Labs (70% app. attenuation)
Primary Fermentation 7 days plastic
Secondary Fermentation 21 days plastic
Other Fermentation
Procedure Mashed @ 152F with 1.5 Qts water per pound of grain. 2 hour enzymatic conversion. My "efficiency" is kind of low @ around 60%, you may need to adjust this for your own efficiency (OG=1.048). I made my yeast as a 1 QT starter from a subculture. I highly recommend doing the same (I'm making 5 gallons of this beer for just over $20). I kegged and force carbonated my batch, you can bottle or keg as you see fit.
