Christmas style winter ale spiced with Cinnamon, Nutmeg and ginger

Recipe Details
Tasting Notes Should have strong Cinnamon flavor with good hints of nutmeg and ginger. Cinnamon should be the most powerful flavor but not overpowering. Slight hint of alcohol sweetness.

Boil Volume 4.00 gallons
Boil Time 60 minutes
Batch Size 5.50 gallons
Yeast Wyeast 1056 - American Ale (primary and secondary) (85% app. attenuation)
Primary Fermentation Glass 13
Secondary Fermentation Glass 13 (Add another package of Wyeast 1056)

Procedure Steeped grains in 4 gallons of water. add grains at 120 and raise to 150 f and hold for 30 minutes. remove grains and sparge with 2 gallons of 170f water. add DME and bring to boil. Hop as scheduled. With 20 minutes left in boil, add LME. With 10 minutes left in boil, add spices. Cool to 70 and pitch yeast. Add second smack pack to secondary to complete fermentation.
