Tasting Notes At first the honey gave an overwhelming taste of wildflower pollen, but after two weeks in the bottle, the flavor has blended with the malt and hops to yield a perfectly balanced pale ale. Great for summer.

Procedure BATCH SPARGE) Mix the crushed grains well in lauter tun. Heat 2 gallons of water to 168 F. Mash in slowly in stages. The temperature of the mash should stabilize at about 154 F. Maintain the mash vessel at temperature for at least 1 hour, stirring every 15 minutes. Heat 2.5 gallons of water to a temperature at or just below 170 F. Add to mash tun and allow to settle for 10 minutes. Slowly drain and collect 1/2 gal. wort from the lauter tun, then gently pour this back on top of the grain bed. Drain the mash tun completely into the kettle. Heat more water to just below 170F. The amount is determined by the amount needed to collect a final 6 gallons of wort. Add to mash tun, stir well, and let stand for 10 minutes. Drain the mash tun again into the kettle, collecting 6 gals. of wort. Add bittering hops and Irish moss and boil for 50 min. Add flavor hops and honey for last 10 min. of the boil. Turn off the heat and add aroma hops. Wait 15 minutes, strain out hops, cool the wort to 80 F, aerate the beer and pitch your yeast. Dry hop if desired. Ferment for 10-14 days. Prime and bottle, age for two to three weeks and enjoy!
