Tasting Notes It started out too bitter and too strong. It was perfect after 2 months in the bottle. I rated it as a 5.5/10 and just within the BJCP guide for an American Pale Ale (If a little too highly bittered), friends had it down as 6.5-7/10 but I think they were either just being kind or weren't heavy drinkers.

Procedure Started priming yeast in sugar water. Bring 3 gallons of water to the boil. Add all extracts and bring back to the boil. When flecks of the hot break are visable added bittering hops. Boiled for 60 minutes. Added flavour hops. Boiled for a further 15 minutes. (Here is where the bitterness when too high. These hops should have been added at 45 minutes and not 60 minutes.) Flame out at 75 minutes. Chilled in several baths of very cold water. I have two sinks in the laundry, so I used one whilst filling the other. Got down to 20?C in under 20 minutes. Poured into fermenter and topped up with pre-boiled water that was at 15?C to 5 gallons. [Measured OG at 1.052, adjusted for temprature.] Pitched yeast at about 17?C. Vigerously airated. Left to ferment for two weeks. Bottled with one priming tab per bottle. Started drinking after a week. (I will be more patient next time).
