18D. Strong Belgian Ale, Belgian Strong Dark Ale
Description
This is a reasonably sweet belgian strong ale. It definitely has the farmhouse flavor attached. I added the extract at the 30 min mark in the boil to perserve the lighter color.

Recipe Details
Tasting Notes It has the farmhouse edge to it. A good portion of phenolic clove and banana flavors mixing together with a low alcohol heat for the style. It's a good after dinner drink.

Procedure Steep the grains in 120F water and slowly bring the temperature up to 165F. Bring to a boil and add the candi sugar, bring back to a boil and add the bittering hops. At 30 min, add the extract. I used a higher fermentation temperature (72) to try to get a little more phenol character and to maximize attenuation.
