Secondary Fermentation C-keg, 3 weeks

Procedure Mash grains in 2 1/2 gallons of 133F water and hold at 122F for 20 minutes. Raise to 150F and hold 20 minutes. Raise to 158F until complete conversion. Mash out at 168F for 15 minutes and sparge with 172F water to collect about 6 1/2 gallons. Bring to steady boil and add 1st hop addition. Add remaining hops at 40 minutes, 50 minutes and 59 minutes. Add Irish moss during the last 10 minutes.
