Recipe Details
Tasting Notes Earthy pumpkin with a little sweet afternote on the initial taste. Definitely not too sweet, but it's rich in pumpkin flavor with a deep malty aftertaste. There's less pumpkin pie, and more pumpkin beer. The aroma is definitely that of fresh picked pumpkins in the fall. A great beer to drink while listening to ghost stories!

Procedure Get 9lbs worth of pumpkin pie pumpkins. They're smaller (about bocce-ball sized) pumpkins that are used for making pumpkin pies. Cut them in half and de-seed them. Place the halves cut-side down on a baking sheet or pan and bake the pumpkins at 375 for 1 hour or until they look nice and caramelized. Spoon out the very soft flesh and place in a mueslin bag or cheesecloth and steep in 160 degF water for 1 hour. Then steep the specialty grains for another 30 min. Bring to a boil and add the extract, brown sugar, moleasses, and bittering hops. Add the spices, vanilla, and aroma hops with 2 minutes left in the boil.
