Boil Volume 13.50 gallons
Boil Time 75 minutes
Batch Size 10.00 gallons
Yeast Wyeast 2124 Bohemian Lager (74% app. attenuation)
Primary Fermentation Glass 10 days at 46-48 F
Secondary Fermentation Stainless 7-8 Days at 46-48 F
Other Fermentation 24 hours at 65 F
Procedure Dough in 28 qt water at 137 F- Rest at 124 F for 30 Min- Remove 17 qts of thick mash and boil for 15 mins. Returned mash to tun. Rest temp of 153 F set for 60 minutes stiring occasionally, temp at this stage was 150F Removed 12 qts thick mash and boiled for 20 minutes. Raised temp to 168F. Let set for 15 minutes. Sparged for 1 hour with 170F water. Boil for 15 minutes skim surface. Add 2oz Mt. Hood Hops. Boil 45 minutes- add 1 oz Tettnanger hops boil 15 minutes. Run through counterflow heat exchanger to 15 gal demi-john. Temp at demi-john 73F. Airate wort with pump and filter stone for 30 minutes. Temp lowers to 69F. OG 1.051 Add yeast starter. Once fermentation starts reduced temp by 5 degrees per day to 46-48. 10 total days in primary. Racked into my kegs which I shortened the tube so to use as secondary. 8 days this time in Secondary, but usually 7. Filtered beer to my serving kegs. Lagered 6 weeks at 36F under 10lbs Pressure.
