Boil Time 75 minutes
Batch Size 5.00 gallons
Yeast WLP 820 Oktoberfest (78% app. attenuation)
Primary Fermentation Plastic 10 days
Secondary Fermentation Glass 5 weeks

Procedure Step mash. Mash in 10.5 qts at 126 dg F for 30 min. Add 5 qts of 180 F water and raise to 154 F for 30 more minutes. Mash out at 170 with 2 more gallons. Collect 4 gallons for boil. Boil 75 minutes adding DME last 15 minutes of boil. 1 oz Hallertau 75, 1 oz, 20 min, .5oz Hallertau and Cascade for last 5 minutes.
