Description
American style west coast IPA with belgian ale yeast. Inspired by Houblon Chouffe, Pliny the Elder, Damnation and 461 Brewery.

Recipe Details
Tasting Notes Big spicy, piney, citrus hop flavor. Clean, earthy esters from the yeast. Very dry, with a nice big alcohol punch.

Procedure Low efficiency because I use the no sparge method.
Tastybrew ran out of hop additions possible. This last hop addition should be done at flame out (or maybe in a hop back):
.80 oz. Amarillo
.60 oz. Chinook
.50 oz. Simcoe
.50 oz. Summit
.60 oz. Centennial
.50 oz. Columbus

Initial Gravity: 1.070

Mashing procedure:
1.30 qt/gallon ratio. Single infusion. Rest at 140F for 30 minutes. Gradually increase to 150F over 30 minutes. Raise to 165 over 15 minutes and transfer.

Fermentation procedure:
start fermentation at 62F, increase by 1 degree every other day until reaching 65F 6 days, diacetyl rest at 68F for 24 hours. start 14 day dry hopping at about 6 days into the fermentation, As soon as the fermentation slows significantly until there's no bubbles coming out of the blow off tube for at least once every 30 seconds.

Dry hops:
2.5oz. Columbus
.5oz. Summit
1 oz. Centennial
.5 oz Amarillo
1.5oz. Simcoe
.25oz. Chinook

Once terminal gravity is reached (ideally 1.010 or lower), leave it on the yeast for two days afterwards, then crash it down to 50F. Once it's been at 50F for 24 hours, dump all yeast and trub out of the bottom of the conical. Reset the temperature to 64F and add the following dry hop regimen:

.2oz. Amarillo
.3oz. Simcoe
.1oz Chinook
let the temperature slowly creep back up to 64F over a few days. Leave it at 64F for no more than 12 days.. Drop it down to 33F for transfer no more than 14 days total into the dry hopping, so do about 1 day of cold conditioning before transferring it to the serving tank. Very gently stir the dry hopping additions to keep the hops in suspension. Yeast is fermented lower than normal for WLP500/Chimay yeast woudl normally be to bring out clean, balanced, earthy flavors. See Brew Like a Monk (Hieronymus) page 174. Grain bill is inspired by Damnation (Brew Like a Monk, Hieronymous P. 233). Hop schedule inspired by Pliny the Elder.
