An extract recipe that I converted for a friend, from a prior all-grain recipe. The all-grain was 13 pounds of Dingeman's Belgian 2 row pale, and the same specialty grains as below. The extract version turned out nicely, though if I did it again, I'd do it as a partial mash, with about five pounds of DME and five to seven pounds of base malt, in addition to the specialty grains.

Recipe Details
Tasting Notes Super, super high spicy phenolics and esters. I fermented this during a heat wave, so it ripped from about 1.072 to 1.003 in less than 36 hours. Yes, really. It was dry as a bone, but retained a nice sweetness.
Boil Volume 6.00 gallons
Boil Time 60 minutes
Batch Size 5.00 gallons
Yeast Wyeast 3725: Biere de Garde (80% app. attenuation)
Primary Fermentation plastic, 2-5 days at 85*F
Secondary Fermentation glass, 2-3 weeks at 70*F
Other Fermentation tertiary in glass as needed for clarity, 1-2 weeks at 70*F
Procedure DO make a vigorous yeast starter 24 hours in advance. Ferment at HIGH ambient temps: 85*F is ideal, up to 95*F is acceptable, preferably not lower than 80*F. Watch the ferment CLOSELY -- at these high temps, with a solid yeast starter, this could be an explosive fermentation. DO NOT try to ferment more than five gallons in a standard 6.5 gallon bucket, DO NOT do the primary in a glass carboy, and have a blowoff tube ready in case you need to switch out a clogged airlock. At 85*F-90*F, with a vigorous, healthy yeast starter, this could take as little as 24-72 hours to complete primary fermentation. Do NOT ferment this one on your nice new living room carpet. You have been warned.
