Procedure Mash in with 25quarts @ 166 and rest at 148 for 30 minutes. Then add 6.5 quarts @ 210' and rest at 157'-158' for 30-40 minuts or until iodine test confirms complete conversion. Then add 9.5 quarts @ 210' and rest at 165'-168' for 15 minutes (count this last infusion as sparge water). Sparge with 25 quarts @ 180' for 90 minutes at flow rate of 2 quarts per 5 minutes. Collect 13.3 gallons and boil for 90 minutes. Add Hallertau @ 60 minutes, Whirlfloc tablets at 20/10 minutes. Flavor hops with 15 minutes and aroma hops at shutdown. Use a pre-chiller and cool wort to below 60'. Pitch monster 1 gallon (7000ml) starter between two 6.5 gallon carboys filled to 6 gallons each. Ferment for three weeks at 55' then bring temperature to 65' for two days. Transfer to 5 gallon glass carboy topped to the neck and chill to 32' 3 degrees per day and lager for two months. Add one teaspoon per five gallons of fresh yeast (from vial) at bottling to ensure nice carbonation and head. Cold condition bottles at 55' for one month and enjoy.
