A simple refreshing cider for the week long drunkfest "Fiesta San Antonio" commemorating Texas independence. Last full week in April every year. Force carbonate by keg or bottle as you please. Costs approx. $9 for 4 US gallons

Yeast (75% app. attenuation)
Primary Fermentation 2 weeks plastic
Secondary Fermentation 2+ weeks plastic
Other Fermentation cornelius keg or bottle to consume
Procedure Mix 1 can of 100% apple-juice concentrate and two tablespoons of turbinado dark cane sugar in 1 1/2 quarts H2O. bring to 180 F and cool. Add some American dry ale yeast or whatever you have. Even leftover yeast-cake. Set aside in warm place for 12 hours to ferment and multiply (should quadruple yeast population). Take 7 cans of the concentrate plus two cups of the dark sugar and add to one gallon H2O then raise to 165 degrees F for 5 or so minutes. Cool. Sparge to enough cool H2O to make four gallons. Add prepped yeast wort. OG 1.0461. Ferment as you would normally. Age or drink it... be happy.
