Yeast Primary: Generic Dried Lager Yeast; Secondary: Dried Champagne Yeast (75% app. attenuation)
Primary Fermentation Plastic bucket, 5 days @ 70F
Secondary Fermentation Glass Carboy, 7 days @ 65F

Procedure Steep grain bag at 155F for 45 minutes in 3 gallons water. Bring to boil, add extract. Return to boil, add 1oz Northern Brewer hops. Add 1oz Northern Brewer hops at 30 minutes. Add 1tsp Irish Moss at 45 minutes. Add 1oz Northern Brewer hops at 55 minutes. Total boil time: 60 minutes. Add to 3 gallons cold clean water in primary fermenter, cool to 70F, sprinkle lager yeast & shake. Primary fermentation done in 5 days. Add 1 pkg dried Champagne Yeast to bottom of clean glass carboy and rack from primary. Ferment in secondary 1 week. Bottle 5 days at 65F. Move bottles to fridge for 5 more days. Ready to drink! OG: 1.075 FG: 1.022
