Boil Volume 8.33 gallons
Boil Time 90 minutes
Batch Size 5.50 gallons
Yeast WLP002 (70% app. attenuation)
Primary Fermentation Plastic 14 days
Secondary Fermentation Stainless 7 days

Procedure Mash @ 1.4 quarts per pound of grain. Add ginger and honey at knockoff and steep for 20-30 minutes before chilling. Mash out @ 172. Batch sparge if you have to. Otherwise, fly until you get ~ 8.33 gallons of sweet liquor. Don;t forget the 4% expansion for the temp which would mean ~ 8.5 gallons according to your measurements.
