Recipe Details
Tasting Notes The hallertaur hops and addition of sundry spices create a brew that can best be described as intensely fruity without the addition of fruit. The ginger flavor is upfront, giving way to anise, clove and finally allspice. Imagine hot spiced apple cider on a fall day. Ginger flavor strengthens with warming. Try mulled for a very unique take on homebrew. Color is a deep, orange-tinted brown. Head was quite thick and lasted for a good amount of time. There was little to no lacing. The scent is the real show-stopper though. It smells exactly like gingerbread. Try replacing some of the crystal for bisquit malt if you want a nice variation.

Primary Fermentation 7 days in glass carboy (blow off hose needed)

Procedure Partial mash begins by steeping grains in 1 gallon of 150 degree F. water. Sparge with 1 gallon of 170 degree F. water. Add spices at flame out so that they get sanitized, but not so soon as to release their harsh flavors. Steam any later additions of spices, say into your secondary fermentor.
