Yeast 2007 pilsner and a package of danstar ale (75% app. attenuation)
Primary Fermentation plastic 5 days
Secondary Fermentation glass 19 days @ 60F

Procedure Steep crushed grain in bags cold water to 180 for 30 minutes. Remove and add sugars except honey. Bring to boil, add 1 oz perle, 1 oz hallertau 6 cinnamon sticks, 1 tbs whole clove, 1 tsp nutmeg, 1/2 tsp allspice. At 45 minutes add honey and 1/2 oz tettenanger. 4/5 oz saaz for aroma.
