Yeast Danstar windsor ale yeast (75% app. attenuation)
Primary Fermentation plastic 8 days
Secondary Fermentation glass 10 days
Other Fermentation fined and racked 3 days or until clear
Procedure heat 2 gals cold water, 8 cans apple juice concentrate,2 cups brown sugar to 200 F and hold 10 minutes. Flameout, add 21/2 ozs cranberry flavoring,sparge with 7 qts cold water cool to 80F and pitch yeast. Rack 3 times, add 11/2 ozs cranberry flavoring at second, and bottle with 3/4 cup corn sugar when clear. Condition 2 months
