Description
It started out as an attempt to replicate Courage Imperial Stout, but it went awry from the beginning when we overshot out OG (shooting for 1.104 and hit 1.130). Inadequate yeast, stuck fermentations, 2 pitchings of champagne yeast and the addition of two pots of coffee...I only documented about half of what we did. The rest is from memory. I do know that we had it in carboys for over 6 months.

Tasting Notes It tasted questionable at bottling time, but it has definitely come into its own since then. It keeps getting better. Almost a year and a half since brewing and almost a year after bottling and it is tasting great. It is a special occasion when I bust one of these out!

Procedure Steep the Black Malt for 30 minutes at 155 degrees. Remove the grains and add the malt extract syrup. Bring to a boil and 3 oz. of Goldings and 3.5 oz. of Fuggles. After 110 minutes, add 1.25 oz. of Fuggles for the final 10 minutes. Cool and pitch a HEALTHY starter of London Ale Yeast. Let it sit in primary for a month. After a month or so, rack and pitch champagne yeast. Let it sit for a long time. FG should be somewhere around 1.030 to 1.035. When it is ready to bottle, add two pots of fresh roasted coffee (Ethiopian Harar or a Central American variety). Add 3/4 cup of priming sugar.
