Description
This was my attempt at a Thomas Hardy's type beer. This beer was brewed in '98. I recently opened one up for a club event and several people liked it.

Tasting Notes Very much like a big English barley wine, like JW Lees Harvest or Thomas Hardy's

Boil Volume 8.50 gallons
Boil Time 120 minutes
Batch Size 5.50 gallons
Yeast YCKC A08 (No longer available) (75% app. attenuation)
Primary Fermentation Plastic, 7 days 68
Secondary Fermentation Glass, 3 weeks 68

Procedure Mashed at 155. Sparge runoff was about 8.5 gallons. Of this I pulled 2 gallons and boiled this for 1 hour to carmalize. The volume was reduced to 1 gallon. This was then added back into the wort. Added 1/2oz oak chips to keg and let sit for 3 months. Bottled from keg at that point.
