Procedure This is a straight forward american lager. We will be using a beta glucan rest to improve clarity (116 F), a protein rest that promotes Protinase to improve clarity and mouth feel (132 F). Then to beta amylase rest at 146 F for 30 minutes. Then the mash will be decocted to get to 156 where it will rest for 30 minutes. then sparged.
