Procedure This is a very simple cheap (about $19) recipe. Start with steeping the Belgian chocolate malt for about 30 minutes at 145 - 155 degrees. While grains are steeping juice your limes save the peel, boil .25 gal water add 4lbs of sugar and juice of 2 limes stir while boiling to make inverted / candy sugar (the temperature can be upwards of 350 degrees ). When it turns caramel / brown and becomes thick you know it's done. I then let the grain bag drain for about 10 minutes you could sparge if you want. Boil Extract & Inverted Sugar for 60 Min. Try to get as much of the Rhine (white part) off of the peel as you can. Add the coco powder to the boil for 15 min add the lime peel for 5 - 10 min. I leave the peel in for the primary fermentation.
