Recipe Details
Tasting Notes Very easy to drink. Sweet flavor, balanced by great hop character. Citrusy from Simcoes. Not so piney, but distinctive berry nose -- I speculate it's from interaction of Simcoes and honey malt. One could dry hop but not necessary.
Awards Not entered, hopefully mk.II will last long enough to make a competition
Boil Volume 15.00 gallons
Boil Time 90 minutes
Batch Size 13.50 gallons
Yeast Wyeast 1056 Chico (77% app. attenuation)
Primary Fermentation 15 days, glass demijohn
Secondary Fermentation 21 days, glass carboys
Other Fermentation
Procedure Step infusion mash: 145F for 40 min.; 153F for 30 min.; 158F for 15 min.; then up to 171F and sparge
