Boil Volume 6.50 gallons
Boil Time 45 minutes
Batch Size 5.50 gallons
Yeast WL 300 hefe yeast (75% app. attenuation)
Primary Fermentation 1 week
Secondary Fermentation 2 weeks
Other Fermentation Bottle condition at least 2 weeks
Procedure 2 step infusion mash: Add grain to 3 gal of 148 deg water and hold @ 140 deg for 20 min. Then add 3 gal of 165 deg water and hold @ 150-153 deg for 40 min. Sparge with 2 gal of 180 deg water until gone. Add Honey, all hops, gypsum and Irish moss @ initial boil.
