Description
This beer design is much like a classic Bavarian Wheat beer and most closely resembles a Weihenstephan Wheat Beer. It is cold fermented to feature the clove taste of the yeast and minimize any fruit esters.

Tasting Notes This beer has a refreshing taste that finishes with clove, with little to no fruit esters whatsoever. You won't taste any banana or bubble gum flavors here, it is very clean. The foamy head clings to the glass. There is no real hop flavor or taste as intended, but provide a balanced beer flavor.

Procedure Mash temperature is 153 degrees and about 5.2 pH. Water is built up from RO using .75 tsp CaCl and .25 tsp baking soda per 5 gallons of water and adjusting pH with Lactic Acid (about 10 ml). Added yeast nutrient and whirlfloc. Use a blow off tube for this batch as the large 3 L starter is very strong!
