I don't think I ever posted a Journal Entry before so here it goes. Last night brewed my first 10 Gal batch and it was great. My recipe was as follows: 18.5 lbs British 2 Row 10.0 lbs German Smoked (not really smokey if you ask me but I like it) 6.5 lbs Munich Malt 10 L 2.0 lbs Crystal 60 L 2.0 lbs Carapils 1.0 lbs Flaked Oats 2.0 Pounds of Belgian Dark Candy Sugar 90 min Boil. 4.0 oz Northern Brewer, 60 min 2.0 oz Willamet, 45 min 2.0 oz Willamet, 30 min 4.0 oz Cascade, 1 min Had a friend over and had his mash tun to help out. 2 mash tuns with 20 pounds of grain each. Single Step Infusion. Mashed with 6.5 Gal of 180 DF water each. I mashed in at around 162 DF. A bit high but I don't care as I really like full bodied beers. Mashed for 90 mins. Did first running into the kettle and they threwin about 3.5 gal of 180 DF of Batch Spardge water. I ended up with about 14 gals of wort. I boiled for more than 90 mins not exactly sure how long it was boiling before putting the hops in but it over 30 mins. I was hopping to end up with about 11 gals of wort but I filled my first carboy with 5.5 gals and my next fermenter ended up with less than 5 gals of wort. I'm estimating about 4.5 gals. Chilled my wort with an immersion chiller to 75 DF and pitched 5.5 gals with WL Burton Ale yeast (1/2 gal starter) and 4.5 gal with WL Endinborough Ale yeast (also 1/2 gal starter). My OG was 1.092 which is exactly what I was shooting for so I was happy about that. I finished pitching the yeast at around 00:30 last night and at 7:00 this morning it ws already bubbling away. I tasted what I had in the hydrometer berfore throwing it away and it tasted great. I hope it'll taste even better after it's done fermenting and carbonated. While I was cleaning my kettle I noticed that some of the Candy Sugar did not desolve. I pitched the Candy Sugar at the end of the boil. Next time I'll boil the candy sugar longer. Maybe put it in at say no sooner than 20 mins till the end of the boil. I also used all whole leif hops and did not realize how much wort all those leaves stole from me. I'll have to take that into account the next I brew with so many hops. This was my atteempt to brew a Scotish Wee Heavy but I think it turned out to be a Way Heavy which is exactly what I wanted.
