Made a westy clone last yr and tasted beside a st bernardus and a real westy. Happily, it tested right in the middle...a tad above the st bernardus but the yeast didn't sing like westy. I pitched half a cake at 68 and ramped to 82 at 75%. Wondering if I should pitch 1/4 cake and ramp when at 50% fg. Is this a good idea or am I risking a solventy mess?

Most of the ester and fusel production will happen in the first 72 hours. After that, I consider it safe to start raising the temp.
