Hello all old friends and new ones I ain't met yet!

Divorce, loss of house and emotional wreckage forced a 2+year hiatus from my brewing obsession! However, getting my old house back, remarrying and general overall happiness had led to a resurgence of the passion!

Four wasp sting later, a buttload of elbow grease and I have my 1st batch of wee heavy bubbling away. Would like to do a Koelsch for my second batch but lost all of my recipes.

Anyone got any good reccommendations as to a recipe? I tried one that turned out really well but don't remember what the recipe was.

Anyway. hello to all!
Jim

Hey BB. C'mon, I KNOW you have an opinion on a Kolsch beer! Point me in the right direction! How long before we have our first argument?

Not in here we won't. As for the kolsch, I've never made one or I'd be more than happy to help you.

I just finished brewing a Kolsch. I do 90% pils, and 10% Vienna. Used Saaz at 60 and 40 to get to 25 IBU's. I like Wyeast 2565. When I go to 2ndary I'll cold condition for prob 3 weeks for it to clear all the way.

Slainte! and welcome back.

Thanks all! I'll be brewing tomorrow. The wasp stings came from residents who took over in the tubing of my beer rig during my absence!

BB Ah, so things have changed! care to fill me in so I don't inadvertently step on toes?

If I had a dollar for every time I've been stung, I'd be a rich man. Yellow jackets and scorpions are my nemesis.

As for the changes, it's easy. Beer stuff here, non-beer stuff at the other forum. We have some pretty good discussions over there, but right now it's a little tense, to say the least.
